Passing by Wandegeya Market, it’s almost impossible not to be drawn in by the lively voices of young men and women calling out for you to try their famous “kikalaayi”. The term refers to a mouthwatering mix of fried chicken, cabbage, and crispy Irish potato chips; a simple yet irresistible street dish that has become a staple on the eastern side of the market, where small restaurants line the street.

The rich aroma alone makes it hard to resist the temptation, and at the heart of it all stands Sula Birungo, the man behind the creation of kikalaayi, whose culinary invention has grown from a simple idea into one of Wandegeya’s most beloved meals.

Sula Birungo began his journey 15 years ago on a small roadside corner in Wandegeya, where he spent his evenings roasting chicken, a trade that soon became crowded with many vendors.

Determined to stand out, he decided to try something different and created the now-famous chicken kikalaayi, a flavourful mix that unexpectedly captured the hearts of many. What started as a simple experiment quickly turned him into a household name, and today, he proudly runs a thriving restaurant in Wandegeya and a second branch in Ntinda, which is living proof that dreams truly do come to life for those who dare to be different.

Through his hard work, Sula has created jobs for others, training and employing people in both branches. His journey is one of quiet impact, a man of little formal education, who is now a culinary household name.

As Uganda Waragi launched its 60th anniversary campaign, SO UG S0 60, a celebration of Ugandan stories, strength and pride, Sula Birungo was a name that constantly popped up not only because of his culinary inventions that people have come to love, but because just like Uganda Waragi, he has bound Ugandans over the years through food.

So, Sula Birungo was recognized and gifted with a brand-new television set as a token of appreciation for telling the unique Ugandan story and impacting the community through chicken kikalaayi.

While handing over the gift, Hillary Baguma, Brand Manager for Mainstream Spirits at Uganda Breweries said Sula is an inspiration to many and embodies what it means to be So UG — persistent and innovative. “We are honoured to present this token of appreciation to him because he truly deserves it. His impact to community is clearly visible and as Uganda Waragi, we wanted to show him that we see him and appreciate him,” he noted.

“This feels like a dream. When I first heard the news, I thought it was a scam. I’m very thankful to Uganda Waragi,” said an overjoyed Sula during the handover at his Wandegeya market branch. “This will make my restaurant livelier. My customers will be able to watch premier League and Ki Nigeria. I’m happy that my work has been seen and appreciated.”

Sula’s dream doesn’t stop here. He hopes to open more branches across the country, and employ even more people while also growing his business.

Through its “So UG, So 60” campaign, Uganda Waragi continues to shine a light on people like Sula, the everyday unsung heroes who make our communities stronger through their selfless services, yet are seldom acknowledged and appreciated.
